How to Store Homemade Bread and Keep It Fresh

I’m sharing my favorite storage tips for keeping homemade bread fresh longer without ruining the texture or flavor you worked so hard for.

​You’ve spent time making a beautiful loaf of homemade bread, maybe it’s that soft sandwich bread your family devoured last week or a crusty sourdough that made your whole kitchen smell like magic.

A rock hard brick by day two. Let’s fix that.

I’m sharing my favorite storage tips for keeping homemade bread fresh longer without ruining the texture or flavor you worked so hard for.

​🏡 Room Temperature Storage
​

Best For: Loaves you’ll eat within 2–3 days.

  • Store your bread unsliced for max freshness.
  • Wrap in a cotton or linen bread bag, or a beeswax wrap.
  • Keep it on the counter, away from heat or sunlight.
  • Avoid plastic wrap unless you’re trying to keep soft sandwich bread extra moist—but watch for sogginess.

Good to know:

​Sourdough stays fresh longer than yeasted bread due to its acidity. Even so, the crust will soften over time.

​❄️ Freezing Homemade Bread
​

 Best for: Long-term storage (up to 3 months).

  • Let bread cool completely.
  • Slice if desired (so you can pull out just what you need).
  • Wrap tightly in foil, then place in a freezer-safe bag or airtight container.
  • Label with the date.


​To use:
Thaw at room temperature, or toast slices directly from frozen. Whole loaves can be reheated at 325°F wrapped in foil for about 20–30 minutes.



😬 What NOT to Do

Don’t store in the fridge – It accelerates staling.

Don’t wrap warm bread – Moisture gets trapped, leading to a gummy crust.

Don’t store near onions or strong-smelling foods – Bread absorbs odors fast.

🍞 How I Store My Bread at Home


​For our weekly sandwich bread, I slice once cooled and store half on the counter in a cotton bag and half in the freezer. My sourdough gets wrapped in a tea towel and left in a wooden bread box to breathe while staying soft inside. It’s all about knowing how fast your household eats it!
