Pixar’s Ratatouille wasn’t just a beautifully animated film—it was a love letter to creativity, passion, and the power of believing in yourself, even when the world tells you otherwise.

As a lifelong animation fan and Disney kid, this movie hit home for me. Remy, the little rat with a big dream, reminds us that greatness can come from the most unexpected places. That unforgettable quote--“Anyone can cook”—wasn’t really about cooking. It was about heart.

It’s a message I carry with me in my own kitchen and this blog: "As long as you have the passion and the willingness to learn, you can do great things." And today, I want to encourage you with that same belief… through food.

Remy Makes the Ratatouille Dish

My favorite part is the food critics reaction; food can definitely trigger nostalgia bringing back memories of happy times.

The Real Dish Behind the Movie: What is Ratatouille?

In the movie, Chef Remy prepares a stunning confit byaldi—a modern, beautifully layered take on the traditional French vegetable dish, ratatouille. While classic versions are more rustic and stew-like, this spiral version is just as flavorful and even more visually impressive.

But don’t worry, this recipe isn’t about perfection. It’s about trying something new, having fun, and making a dish that looks fancy but is honestly pretty simple to make!

What You’ll Need

Here’s what you’ll need to bring this animated dish to life in your kitchen:

  • Mandoline or sharp knife
  • Cast iron or oven-safe skillet (mine is a Lodge 10”)
  • Silicone brush or spoon for spreading sauce
  • Parchment paper or foil
  • Food processor or blender for the sauce (optional)

🕒 Cooking Time

Here’s a quick breakdown of how long it takes to bring this beautiful dish to life:

Prep Time: 

20–30 minutes
(Slicing the veggies evenly and making a quick sauce takes a bit of love and patience!)

Bake Time (covered):

​30 minutes at 375°F (190°C)

Bake Time (uncovered):

15–20 minutes
(This is where the magic happens—those caramelized edges are everything.)

Optional Broil: 

2–3 minutes on high ​(If you like a touch of roasted color on top.)

Total Time: 

About 45–50 minutes in the oven, plus a little time for prep.
Totally worth it for something this beautiful and flavorful!

Ingredients:
​

  • 1 small eggplant
  • 1 zucchini
  • 1 yellow squash
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 Roma tomato (or a few cherry tomatoes)
  • Olive oil
  • Salt and pepper
  • Fresh thyme or basil, for garnish

For the Sauce:

  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 can (15 oz) crushed tomatoes
  • 1 tsp balsamic vinegar
  • Salt, pepper, pinch of sugar to taste


Instructions:

  1. Make the base sauce:
    Sauté garlic and onion in olive oil until soft. Add bell pepper and cook for another 3 minutes. Stir in crushed tomatoes, season, and let simmer 10 minutes.
  2. Prep your vegetables:
    Slice all veggies into thin, even rounds. A mandoline works great, but a steady hand and sharp knife work too.
  3. Assemble:
    Spread a thin layer of sauce in your skillet. Layer the vegetables in a spiral pattern—alternating colors for a beautiful rainbow effect. Drizzle with olive oil and sprinkle herbs on top.
  4. Bake:
    Cover loosely with foil or parchment and bake at 375°F (190°C) for 30 minutes. Remove cover and bake an additional 15–20 minutes until veggies are tender and edges are slightly caramelized.
  5. Finish & serve:
    Add fresh basil and serve warm with slices of focaccia for dipping.


​How to Make Oven-Baked Ratatouille
​Step by Step

1.​ Make the Sauce:

​In a skillet over medium heat, sauté onion and garlic in olive oil. Add crushed tomatoes, balsamic vinegar, salt, pepper, and a pinch of sugar. Simmer for 10–15 minutes until thickened. Blend if you want a smooth sauce.

I was inspired by a beautifully edited video I found on Pinterest that used shallots instead of onions—and I loved the idea! So in the video version of this recipe, you’ll see me use a finely chopped shallot for a slightly sweeter, more delicate flavor.

Want to try it yourself? Just swap in one small shallot for the onion or use both for extra depth!

​Slice eggplant, squash, zucchini, and peppers into thin, even rounds. A mandoline helps keep slices consistent.

​Spread your sauce across the bottom of your baking dish. Arrange sliced vegetables in a spiral or overlapping rows, alternating colors. Brush the top with olive oil and sprinkle with salt, pepper, and herbs.

​Cover loosely with foil or parchment. Bake at 375°F (190°C) for 40–45 minutes until veggies are tender. Uncover for the last 10 minutes for a bit of caramelization.
