Instructions:

1. Brown the butter:

Melt butter over medium heat, swirling occasionally. Cook until golden brown and nutty. Let cool slightly.

2. Mix the dry ingredients:

In a medium bowl, whisk together flour, cornstarch, baking soda, and a pinch of salt.

3. Blend the wet ingredients:

In a large bowl, mix the brown butter, granulated sugar, brown sugar, and espresso powder until smooth. Beat in the egg, egg yolk, vanilla extract, and optional almond extract.

4. Combine:

Slowly add the dry ingredients. Stir until just combined, then fold in the chocolate and nuts if using.

5. Chill:

Cover and refrigerate dough for at least 1 hour (overnight preferred).

6. Shape and bake:

Preheat oven to 350°F (175°C). Roll out dough on lightly floured surface. Use a heart-shaped cutter and transfer to parchment-lined baking sheets. Sprinkle with flaky salt.

7. Bake:

8–10 minutes or until edges are set and centers look slightly soft.

8. Cool

Let rest on the sheet 5 minutes, then transfer to a wire rack to cool completely.

The Magic of Brown Butter:

Browning butter is a game-changer in baking. It’s a simple process that elevates the flavor profile of your cookies. By cooking the butter until it turns golden brown and releases a nutty aroma, you’ll add an irresistible depth of flavor to your dough. Just be sure to let it cool slightly before mixing it with the other ingredients.

Tips for Success

  • Let the browned butter cool so it doesn’t melt the sugar too quickly.
  • Chill the dough to prevent spreading.
  • Use a mix of chopped chocolate and chips for variety in texture.
  • Don’t overbake! Cookies continue cooking on the sheet after removing from the oven. This is why I recommend a cooling rack.

    Welcome to Scratch Crafted Meals!

Hi there! I’m Victoria (Tori Lynn) the creator of Scratch Crafted Meals. I started this blog as a space to share my love for creating delicious, homemade dishes from scratch in which I do for my family weekly.

There’s something magical about taking simple ingredients and transforming them into meals that bring people together, and I’m thrilled to share that magic with you.

My approach to cooking is all about celebrating the process. Whether it’s mastering a classic recipe, trying something new, or finding ways to make everyday meals a little more special, I believe good food doesn’t have to be complicated – it just has to be crafted with care.

Beyond the recipes, you’ll find stories, tips, and a little behind-the-scenes peek into my kitchen. Whether you’re a seasoned home chef or just starting your culinary journey, my goal is to inspire confidence, spark creativity, and maybe even make cooking feel a little less like a chore and a lot more like an adventure.

So, grab your apron and let’s create something amazing – from scratch.

    Thanks for stopping by!
    Warmly,
    Tori Lynn
