Chicken Gnocchi Recipe: A Comforting, Homemade Delight

Ingredients:

For chicken:

3-4 boneless skinless chicken breasts or thighs (I prefer thighs) cooked and diced
​2 tbsp Olive oil

2 tsp Sea salt or (Table salt)
1 tbsp Onion Powder
1 tbsp Black pepper
1 tbsp Garlic Powder
1 tbsp Oregano
1 tbsp thyme
1 tablespoon Basil

For soup:

2 stalk of celery - chopped
½ white onion - diced
2 teaspoons minced garlic
½ cup shredded carrots
1 tablespoon olive oil
4 cups low sodium chicken broth
One cube of chicken bouillon and one spoonful
of better than bouillon (see note)
salt and pepper - to taste
1 teaspoon thyme
16 ounces potato gnocchi
2 cups of heavy cream
1 cup fresh spinach - roughly chopped

Instructions:

  • Season chicken then add in a nonstick skillet (cast iron preferred) add your chicken and sear on both sides until golden brown. Once fully cooked put to the side and chop.

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add garlic for one minute until fragrant. Then celery, onions, and carrots and saute for 2-3 minutes until onions are translucent.
 
  • Add chicken, chicken broth, bouillon cube, and spoonful of better than bouillon (if desired) and thyme, bring to a boil, then gently stir in gnocchi. Boil for 3-4 minutes longer before reducing heat to a simmer and cooking for 10 minutes.
 
  • Stir in heavy whipping cream and spinach and cook another 1-2 minutes until spinach is tender. Taste, add salt and pepper if needed, and serve.

Pro Tips:


  • Make It Ahead: Prepare the sauce and chicken in advance. When ready to eat, add the gnocchi and reheat everything together.
  • Vegetable Boost: Add mushrooms, sun-dried tomatoes, or peas for extra texture and flavor.
  • Leftovers: Store in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop, adding a splash of chicken broth or cream to loosen the sauce.

Note* Chicken bouillon cube and or better than bouillon flavoring is by preference for added flavor boost. Also, for less ingredients you can swap seasoning on chicken for Italian seasoning if desired.
