Chicken Gnocchi Soup

There’s something about the first signs of fall that has me pulling out my coziest sweaters, lighting a candle, and heading straight to the kitchen for soup season. And if there’s one recipe that marks the official start of that comfort filled time of year, it’s this Chicken Gnocchi Soup.

A Comforting Homemade Delight

This one is extra special. Not only is it my personal go-to for chilly days, but it’s also one of the most requested meals by my son—who happens to be a very picky eater. That alone tells you everything you need to know. It’s rich, flavorful, and nourishing, packed with protein and veggies in every spoonful. And if your kids are anything like mine, it just might become a new staple in your dinner rotation, too.

Ingredients:

  • 1 lb chicken breast, diced
  • 1 package (16 oz) potato gnocchi
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach, roughly chopped
  • Salt and pepper, to taste
  • Optional: Crushed red pepper flakes for a spicy kick

Instructions:

1. Cook the Chicken:

  • Heat olive oil in a large skillet over medium heat. Add diced chicken, seasoning with salt, pepper, and Italian seasoning. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove and set aside.

  • In the same skillet, add a drizzle of olive oil if needed. Sauté minced garlic until fragrant, about 1 minute.

3. Prepare the Sauce:

  • Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer and let it cook for 3-5 minutes to thicken slightly.

4. Add Gnocchi:

  • Stir the gnocchi directly into the sauce. Cover and cook for 3-5 minutes, or until the gnocchi is tender and cooked through.

5. Combine Chicken and Spinach:

  • Return the cooked chicken to the skillet, along with the spinach. Stir until the spinach wilts and everything is well combined.

6. Finish with Parmesan:

  • Sprinkle grated Parmesan over the top and stir until melted into the sauce. Adjust seasoning with additional salt, pepper, or red pepper flakes if desired.

7. Serve and Enjoy:

  • Serve hot, garnished with extra Parmesan or fresh herbs like parsley for a beautiful presentation.
