My Italian Sausage Tortellini Soup is the perfect comfort food, combining bold flavors, tender pasta, and fresh ingredients into one irresistible dish. This soup starts with savory Italian sausage, which adds a deliciously spiced and hearty base. Sautéed with aromatic onions and garlic, the rich aroma will instantly draw everyone into the kitchen. Then, it’s simmered with a vibrant tomato-based broth, seasoned with Italian herbs like basil, oregano, and a hint of crushed red pepper for just the right amount of heat.

The real star of the show? Plump, cheese-filled tortellini that soaks up all those delicious flavors. Toss in some fresh spinach at the end for a pop of color and a healthy twist—it wilts perfectly into the broth, adding just the right balance of freshness.

What I love most about this recipe is how versatile it is. You can easily swap in chicken sausage or go for a vegetarian version by skipping the sausage and using vegetable broth. It’s a meal that works for weeknight dinners and special occasions alike, taking less than 30 minutes to come together.

Cook Time: 30 minutes
Total Time: 40 minutes


​Ingredients:

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil (if needed)
  • 1 small yellow onion, diced
  • 3–4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • 1 (6 oz) can tomato paste
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 (9 oz) package refrigerated cheese tortellini
  • 2 cups fresh baby spinach
  • Salt & pepper, to taste
  • Freshly grated Parmesan, for serving
  • 1 cube of chicken bouillon ( if desired for additional flavor)


​Instructions:

  1. Brown the Sausage- In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and fully cooked. Drain excess grease if needed.
  2. Build the Flavor- Add diced onion and cook for 3–4 minutes until softened. Stir in garlic, Italian seasoning, and red pepper flakes. Sauté for 1 minute until fragrant.
  3. Tomato Base- Stir in tomato paste and diced tomatoes. Cook for 1–2 minutes, then pour in the chicken broth. Bring to a gentle boil.
  4. Add Cream & Tortellini-Lower the heat slightly and stir in the heavy cream. Add the tortellini and simmer for 5–7 minutes, or until the pasta is tender.
  5. Finish with Spinach-Stir in the baby spinach and cook for another 1–2 minutes until wilted. Season with salt and pepper to taste.
  6. Serve- Ladle into bowls and top with freshly grated Parmesan. Serve with crusty bread or garlic toast for a complete meal.
