  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 (9 oz) package refrigerated cheese tortellini
  • 2 cups fresh baby spinach
  • Salt & pepper, to taste
  • Freshly grated Parmesan, for serving
  • 1 cube of chicken bouillon ( if desired for additional flavor)

  1. Brown the Sausage- In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and fully cooked. Drain excess grease if needed.
  2. Build the Flavor- Add diced onion and cook for 3–4 minutes until softened. Stir in garlic, Italian seasoning, and red pepper flakes. Sauté for 1 minute until fragrant.
  3. Tomato Base- Stir in tomato paste and diced tomatoes. Cook for 1–2 minutes, then pour in the chicken broth. Bring to a gentle boil.
  4. Add Cream & Tortellini-Lower the heat slightly and stir in the heavy cream. Add the tortellini and simmer for 5–7 minutes, or until the pasta is tender.
  5. Finish with Spinach-Stir in the baby spinach and cook for another 1–2 minutes until wilted. Season with salt and pepper to taste.
  6. Serve- Ladle into bowls and top with freshly grated Parmesan. Serve with crusty bread or garlic toast for a complete meal.
