I Recreated a 5-Star Lobster Bisque I Saw on TV—and My Family Loved It

Ever watched a cooking competition and thought, "I have to try that"? That’s exactly what happened to me while watching Culinary Class Wars on Netflix. The chefs on that show brought such emotion, art, and skill to every plate—especially one stunning bowl of lobster bisque, served with a whole lobster tail curled like a crown. That image never left me.

So I made it my mission to bring that elegance to our Sunday dinner table. This post is my take on a rich and creamy lobster bisque recipe, inspired by a Netflix competition show—an elegant seafood soup made from scratch but simple enough for home cooks.

Ingredients:

Servings: 4-6
Prep Time: 20 minutes | Cook Time: 45 minutes | Total Time: 1 hour 5 minutes

​For the Lobster Stock:​
  • 2 lobster tails (or 1 whole lobster, about 1 ½ lbs)
  • 2 tbsp butter
  • 1 small onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • ½ cup white wine
  • 4 cups seafood or chicken stock
  • 1 bay leaf
  • ½ tsp paprika
  • Salt and pepper, to taste

For the Bisque:
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup heavy cream
  • ½ cup whole milk
  • ½ tsp Old Bay seasoning (optional)
  • ¼ tsp cayenne pepper (optional, for heat)
  • 2 tbsp cognac or brandy (optional)
  • Chopped chives or parsley, for garnish



​Instructions:

Step 1: Prepare the Lobster

  1. Bring a pot of salted water to a boil. Add the lobster tails and cook for about 5 minutes, until the shells turn red.
  2. Remove the lobster from the water and let it cool slightly. Remove the meat from the shells and chop it into bite-sized pieces. Set aside.
  3. Keep the shells to make a flavorful broth.

Step 2: Make the Lobster Stock

  1. In a large pot, melt 2 tbsp butter over medium heat. Add the lobster shells and sauté for 3-4 minutes to release their flavor.
  2. Add the chopped onion, carrot, celery, and garlic. Sauté for another 5 minutes until fragrant.
  3. Stir in the tomato paste and cook for 2 minutes to deepen the flavor.
  4. Deglaze the pot with white wine, scraping any bits off the bottom.
  5. Add the stock, bay leaf, paprika, salt, and pepper. Simmer for 20 minutes.
  6. Strain the stock through a fine-mesh sieve into a bowl, discarding the solids. Set the broth aside.

Step 3: Make the Bisque

  1. In the same pot, melt 2 tbsp butter over medium heat. Whisk in 2 tbsp flour and cook for 1-2 minutes to form a roux.
  2. Slowly whisk in the strained lobster stock, stirring until smooth.
  3. Reduce the heat to low and add heavy cream, milk, Old Bay seasoning, and cayenne pepper. Simmer gently for 10 minutes, stirring occasionally.
  4. Stir in the chopped lobster meat and cook for 2-3 minutes, just to heat through.
  5. If using, add cognac or brandy for extra depth.

Step 4: Serve & Garnish

  2. Garnish with chopped chives or parsley.
