We originally planned to make this with soy sauce — but realized mid-cook we were out. So we improvised with a quick pantry-friendly glaze, and honestly… it might be our favorite version yet. It’s sticky, sweet, perfectly savory, and comes together in about 30 minutes. Served in a carved-out pineapple shell, it’s just as fun to eat as it is to look at.

• 2 tbsp pineapple juice (or orange juice)
• 1 tbsp balsamic vinegar or apple cider vinegar
• 1 tsp honey or brown sugar
• 1 clove garlic, minced
• ½ tsp ground ginger
• Pinch of salt
• Optional: ½ tsp Worcestershire or BBQ sauce (adds umami)
• 1 tsp cornstarch + 1 tbsp water (for thickening)

1. Cook Your Rice-
   Cook rice according to the package directions. Set aside.
2. Prep the Pineapple Bowl-
   Slice pineapple in half lengthwise. Carefully scoop out the flesh and dice about 1 cup for the bowl. Set pineapple halves aside for serving.
3. Sear the Chicken-
   Heat oil in a skillet over medium heat. Add chicken and a sprinkle of garlic powder, cooking for 6–8 minutes until golden and cooked through. Remove and set aside.
4. Make the Glaze-
   In a small pot or pan, mix the glaze ingredients (except the cornstarch slurry). Bring to a simmer, stir in the slurry, and cook for 1–2 minutes until glossy and slightly thick.
5. Sauté Veggies-
   In the same skillet, add a little oil if needed and sauté peppers and onion for 2–3 minutes. Add the chopped pineapple and cooked chicken. Pour in the glaze and stir to coat everything well.
6. Assemble the Bowls-
   Add rice to each pineapple shell. Spoon the chicken-veggie mix over the top. Garnish with cilantro, sesame seeds, or anything you like.
